Spinach and Feta Breakfast Quesadilla

A twist on the classic breakfast burrito, filled with spinach, feta, and scrambled eggs

Ingredients

  • 0.5 cup Monterey Jack cheese
  • 2 large flour tortillas
  • 1 cup spinach leaves
  • 1 tablespoon unsalted butter
  • Salt and pepper
  • 2 large eggs
  • 0.25 cup feta cheese

Instructions

  1. Step 1: In a large bowl, whisk together eggs and a pinch of salt. Set aside.
  2. Step 2: In a medium skillet, melt butter over medium heat. Add spinach and cook until wilted, about 2 minutes.
  3. Step 3: Add crumbled feta to the skillet and stir to combine. Cook for 1 minute.
  4. Step 4: Pour whisked eggs over the spinach and feta mixture. Scramble eggs until cooked through, about 3-4 minutes.
  5. Step 5: In a separate pan or griddle, warm tortillas over medium heat for 1 minute on each side.
  6. Step 6: To assemble quesadillas, lay a tortilla flat and sprinkle shredded cheese on half of the tortilla.
  7. Step 7: Spoon scrambled egg mixture on top of cheese, then fold tortilla in half to enclose filling.
  8. Step 8: Cook quesadilla for 2-3 minutes on each side, until cheese is melted and tortilla is crispy.
