Spinach and Ricotta Vegetable Lasagna

Ingredients

  • 2 cups spinach leaves
  • 8 noodles lasagna
  • 1 cup mozzarella cheese
  • 1 tsp basil
  • 0.5 cup Parmesan cheese
  • 2 tbsp olive oil
  • 1 cup marinara sauce
  • 2 cloves garlic
  • 1 tsp oregano
  • Salt and pepper
  • 1 cup ricotta cheese
  • 1 cup bell peppers
  • 1 cup zucchini
  • 1 cup mushrooms

Instructions

  1. Step 1: Preheat oven to 375°F (190°C).
  2. Step 2: Cook lasagna noodles according to package directions. Drain and set aside.
  3. Step 3: In a medium skillet, heat olive oil over medium heat. Add garlic, mushrooms, bell peppers, and zucchini. Cook until vegetables are tender, about 5 minutes.
  4. Step 4: In a large bowl, combine spinach, ricotta cheese, mozzarella cheese, Parmesan cheese, basil, oregano, salt, and pepper. Mix well.
  5. Step 5: Spread a layer of marinara sauce in the bottom of a 9x13-inch baking dish. Arrange 4 lasagna noodles on top.
  6. Step 6: Spread half of the ricotta mixture over the noodles, followed by half of the sautéed vegetables.
  7. Step 7: Repeat the layers, starting with the noodles, marinara sauce, ricotta mixture, and vegetables.
  8. Step 8: Top the final layer of noodles with the remaining marinara sauce and sprinkle with mozzarella cheese.
  9. Step 9: Cover the baking dish with aluminum foil and bake for 30 minutes.
  10. Step 10: Remove the foil and continue baking for an additional 10-15 minutes, or until the cheese is melted and bubbly.
