Description
A layered pasta dish with spinach, ricotta, and sautéed vegetables
Ingredients
- 2 cups spinach leaves
- 8 noodles lasagna
- 1 cup mozzarella cheese
- 1 tsp basil
- 0.5 cup Parmesan cheese
- 2 tbsp olive oil
- 1 cup marinara sauce
- 2 cloves garlic
- 1 tsp oregano
- Salt and pepper
- 1 cup ricotta cheese
- 1 cup bell peppers
- 1 cup zucchini
- 1 cup mushrooms
Instructions
- Step 1: Preheat oven to 375°F (190°C).
- Step 2: Cook lasagna noodles according to package directions. Drain and set aside.
- Step 3: In a medium skillet, heat olive oil over medium heat. Add garlic, mushrooms, bell peppers, and zucchini. Cook until vegetables are tender, about 5 minutes.
- Step 4: In a large bowl, combine spinach, ricotta cheese, mozzarella cheese, Parmesan cheese, basil, oregano, salt, and pepper. Mix well.
- Step 5: Spread a layer of marinara sauce in the bottom of a 9x13-inch baking dish. Arrange 4 lasagna noodles on top.
- Step 6: Spread half of the ricotta mixture over the noodles, followed by half of the sautéed vegetables.
- Step 7: Repeat the layers, starting with the noodles, marinara sauce, ricotta mixture, and vegetables.
- Step 8: Top the final layer of noodles with the remaining marinara sauce and sprinkle with mozzarella cheese.
- Step 9: Cover the baking dish with aluminum foil and bake for 30 minutes.
- Step 10: Remove the foil and continue baking for an additional 10-15 minutes, or until the cheese is melted and bubbly.
