Description
A fast food style breakfast burrito filled with grilled steak, scrambled eggs, and melted cheese.
Ingredients
- 2 cloves garlic
- Salt and pepper
- 0.5 cup onion
- 1 cup Monterey Jack cheese
- 0.5 cup vegetable oil
- 8 large flour tortillas
- 1 cup cheddar cheese
- 8 large eggs
- 1 lb flank steak
Instructions
- Step 1: Preheat grill to medium-high heat.
- Step 2: Season steak with salt and pepper. Grill for 5-7 minutes per side, or until cooked to desired doneness. Let rest for 5 minutes before slicing into thin strips.
- Step 3: In a large skillet, heat 1 tablespoon of vegetable oil over medium heat. Add chopped onion and cook until translucent, about 3-4 minutes. Add garlic and cook for an additional minute.
- Step 4: In a large bowl, whisk together eggs and a pinch of salt. Pour egg mixture over onion mixture in skillet and scramble until eggs are cooked through.
- Step 5: In a large pan, warm tortillas over medium heat for about 30 seconds on each side.
