Description

A fast food style breakfast burrito filled with grilled steak, scrambled eggs, and melted cheese.

Ingredients

  • 2 cloves garlic
  • Salt and pepper
  • 0.5 cup onion
  • 1 cup Monterey Jack cheese
  • 0.5 cup vegetable oil
  • 8 large flour tortillas
  • 1 cup cheddar cheese
  • 8 large eggs
  • 1 lb flank steak

Instructions

  1. Step 1: Preheat grill to medium-high heat.
  2. Step 2: Season steak with salt and pepper. Grill for 5-7 minutes per side, or until cooked to desired doneness. Let rest for 5 minutes before slicing into thin strips.
  3. Step 3: In a large skillet, heat 1 tablespoon of vegetable oil over medium heat. Add chopped onion and cook until translucent, about 3-4 minutes. Add garlic and cook for an additional minute.
  4. Step 4: In a large bowl, whisk together eggs and a pinch of salt. Pour egg mixture over onion mixture in skillet and scramble until eggs are cooked through.
