Description
Sizzling steak and pepper fajitas with a spicy kick
Ingredients
- 1 cup shredded cheese
- 1.5 lbs flank steak
- 2 cloves garlic
- 2 tbsp vegetable oil
- 1 large onion
- 8 small flour tortillas
- 1 tsp oregano
- 0.5 cup lime juice
- 0.25 cup cilantro
- 0.25 tsp cayenne pepper
- 2 large bell peppers
- 0.25 tsp cumin
- Salt and pepper
Instructions
- Step 1: In a large resealable plastic bag, combine lime juice, garlic, oregano, cumin, and cayenne pepper. Add the steak, turning to coat. Seal and refrigerate for at least 2 hours or overnight.
- Step 2: Heat 1 tablespoon of oil in a large cast-iron skillet over medium-high heat. Remove the steak from the marinade, letting any excess liquid drip off. Cook the steak for 5-7 minutes per side, or until it reaches your desired level of doneness. Transfer the steak to a cutting board and let it rest for 5 minutes before slicing it thinly against the grain.
- Step 3: In the same skillet, add the remaining 1 tablespoon of oil. Add the sliced onion and cook for 3-4 minutes, or until it starts to soften. Add the sliced bell peppers and cook for an additional 4-5 minutes, or until the vegetables are tender.
- Step 4: Add the sliced steak back into the skillet and stir to combine with the vegetables. Season with salt and pepper to taste.
- Step 5: Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
- Step 6: Assemble the fajitas by placing a portion of the steak and vegetable mixture onto a tortilla, followed by a sprinkle of cheese, a dollop of cilantro, and a squeeze of lime juice. Serve immediately.
