Description
Sizzling steak and vegetables served with warm flour tortillas
Ingredients
- 2 tbsp vegetable oil
- 1 large onion
- 0.25 tsp cayenne pepper
- 0.5 tsp cumin
- 1 tsp oregano
- 2 cloves garlic
- 1 lb flank steak
- 0.5 cup lime juice
- Salt and pepper
- 2 large bell peppers
- 8 small flour tortillas
Instructions
- Step 1: In a large resealable plastic bag, combine lime juice, garlic, oregano, cumin, and cayenne pepper.
- Step 2: Add the steak to the marinade, turning to coat. Seal and refrigerate for at least 2 hours or overnight.
- Step 3: Preheat a large cast-iron skillet over medium-high heat.
- Step 4: Remove the steak from the marinade, letting any excess liquid drip off.
- Step 5: Add 1 tablespoon of oil to the skillet and cook the steak for 5-7 minutes per side, or until it reaches desired doneness.
- Step 6: Transfer the steak to a cutting board and let it rest for 5 minutes.
- Step 7: In the same skillet, add the remaining 1 tablespoon of oil. Cook the sliced onions and bell peppers for 5-7 minutes, or until they are tender and lightly charred.
- Step 8: Slice the steak against the grain into thin strips.
- Step 9: Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
- Step 10: Assemble the fajitas by placing the steak and vegetables onto the tortillas and serving immediately.
