Ingredients

  • 2 tbsp vegetable oil
  • 1 large onion
  • 0.25 tsp cayenne pepper
  • 0.5 tsp cumin
  • 1 tsp oregano
  • 2 cloves garlic
  • 1 lb flank steak
  • 0.5 cup lime juice
  • Salt and pepper
  • 2 large bell peppers
  • 8 small flour tortillas

Instructions

  1. Step 1: In a large resealable plastic bag, combine lime juice, garlic, oregano, cumin, and cayenne pepper.
  2. Step 2: Add the steak to the marinade, turning to coat. Seal and refrigerate for at least 2 hours or overnight.
  3. Step 3: Preheat a large cast-iron skillet over medium-high heat.
  4. Step 4: Remove the steak from the marinade, letting any excess liquid drip off.
  5. Step 5: Add 1 tablespoon of oil to the skillet and cook the steak for 5-7 minutes per side, or until it reaches desired doneness.
  6. Step 6: Transfer the steak to a cutting board and let it rest for 5 minutes.
  7. Step 7: In the same skillet, add the remaining 1 tablespoon of oil. Cook the sliced onions and bell peppers for 5-7 minutes, or until they are tender and lightly charred.

  9. Step 9: Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
