Description
A classic blueberry pie with a crunchy streusel topping
Ingredients
- 1 tsp salt
- 2 cups blueberries
- 1 tsp cinnamon
- 0.5 cups all-purpose flour
- 2 tbsp cornstarch
- 0.5 cup brown sugar
- 0.25 cup rolled oats
- 0.5 cup water
- 1 cup butter
- 0.5 cup granulated sugar
Instructions
- Step 1: Preheat oven to 375°F (190°C).
- Step 2: In a large bowl, whisk together flour and salt. Add cold butter and use a pastry blender or fingers to work into flour until mixture resembles coarse crumbs.
- Step 3: Gradually add ice-cold water, stirring with a fork until dough comes together in a ball. Wrap in plastic wrap and refrigerate for 30 minutes.
- Step 4: On a lightly floured surface, roll out dough to a thickness of 1/8 inch. Transfer to a 9-inch pie dish and trim edges to fit.
- Step 5: In a separate bowl, whisk together blueberries, granulated sugar, cornstarch, and cinnamon. Pour into pie crust.
- Step 6: In another bowl, mix together rolled oats, brown sugar, and cold butter until crumbly. Spread evenly over blueberry filling.
- Step 7: Bake for 45-50 minutes or until crust is golden brown and streusel topping is crispy.
- Step 8: Let cool for 30 minutes before serving.
