Description

Roasted acorn squash filled with a savory mixture of sausage, apples, and herbs

Ingredients

  • 1 pound Italian sausage
  • 2 cloves garlic
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 0.5 cup breadcrumbs
  • 1 teaspoon sage
  • 1 medium apple
  • 1 medium onion
  • 0.5 teaspoon black pepper
  • 2 medium acorn squash
  • 0.5 cup Parmesan cheese

Instructions

  1. Step 1: Preheat oven to 400°F (200°C)
  2. Step 2: Cut the acorn squash in half lengthwise and scoop out the seeds
  3. Step 3: Place the squash on a baking sheet, cut side up, and roast for 30 minutes
  4. Step 4: In a large skillet, cook the sausage over medium-high heat, breaking it up with a spoon, until no longer pink, about 5 minutes
  5. Step 5: Add the chopped onion, garlic, and apple to the skillet and cook until the onion is translucent, about 5 minutes
  6. Step 6: Stir in the breadcrumbs, olive oil, sage, salt, and pepper
  7. Step 7: Stuff each squash half with the sausage mixture and top with Parmesan cheese
  8. Step 8: Return the squash to the oven and bake for an additional 20-25 minutes, or until the filling is golden brown and the squash is tender
