Description
Roasted acorn squash filled with a savory mixture of sausage, apples, and herbs
Ingredients
- 1 pound Italian sausage
- 2 cloves garlic
- 1 teaspoon salt
- 1 tablespoon olive oil
- 0.5 cup breadcrumbs
- 1 teaspoon sage
- 1 medium apple
- 1 medium onion
- 0.5 teaspoon black pepper
- 2 medium acorn squash
- 0.5 cup Parmesan cheese
Instructions
- Step 1: Preheat oven to 400°F (200°C)
- Step 2: Cut the acorn squash in half lengthwise and scoop out the seeds
- Step 3: Place the squash on a baking sheet, cut side up, and roast for 30 minutes
- Step 4: In a large skillet, cook the sausage over medium-high heat, breaking it up with a spoon, until no longer pink, about 5 minutes
- Step 5: Add the chopped onion, garlic, and apple to the skillet and cook until the onion is translucent, about 5 minutes
- Step 6: Stir in the breadcrumbs, olive oil, sage, salt, and pepper
- Step 7: Stuff each squash half with the sausage mixture and top with Parmesan cheese
- Step 8: Return the squash to the oven and bake for an additional 20-25 minutes, or until the filling is golden brown and the squash is tender
