Ingredients

  • 1 pound ground beef
  • 1 cup white rice
  • 1 medium onion
  • 1 can diced tomatoes
  • 0.25 cup cheddar cheese
  • 4 large bell peppers
  • 2 cloves garlic
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 teaspoon paprika

Instructions

  1. Step 1: Preheat oven to 375°F (190°C).
  2. Step 2: Cut off the tops of the bell peppers and remove seeds and membranes.
  3. Step 3: In a large skillet, cook the ground beef over medium-high heat until browned, breaking into small pieces.
  4. Step 4: Add the chopped onion and minced garlic to the skillet and cook until the onion is translucent.
  5. Step 5: Stir in the cooked rice, diced tomatoes, paprika, salt, and pepper. Cook for 2-3 minutes.
  6. Step 6: Stuff each bell pepper with the rice and beef mixture and top with shredded cheese.
  7. Step 7: Place the stuffed peppers in a baking dish and cover with aluminum foil.
  8. Step 8: Bake for 30 minutes, then remove the foil and bake for an additional 15-20 minutes, until the peppers are tender.
