Description

Ingredients
- 2 lemons
- 4 fillets flounder
- 0.25 cup spinach
- 1 tsp lemon zest
- 2 tbsp olive oil
- 0.5 cup jumbo lump crab meat
- 0.25 tsp black pepper
- 2 cloves garlic
- 0.25 cup feta cheese
- 1 tsp parsley
- 0.5 tsp salt
Instructions
- Step 1: Preheat oven to 400°F (200°C).
- Step 2: In a medium bowl, combine crab meat, spinach, feta cheese, garlic, parsley, lemon zest, salt, and pepper. Mix well.
- Step 3: Lay flounder fillets flat and make a horizontal incision in each fillet to create a pocket. Stuff each fillet with the crab mixture.
- Step 4: Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the stuffed flounder fillets for 2-3 minutes on each side.
- Step 5: Transfer the skillet to the preheated oven and bake for 8-10 minutes or until the fish is cooked through.
- Step 6: Serve immediately with lemon wedges on the side.
