Description
Tender zucchinis hollowed and filled with a savory mixture of sausage, breadcrumbs, and cheese.
Ingredients
- 1 pound Italian sausage
- 1 cup Parmesan cheese
- 1 egg
- 1 medium onion
- 2 cloves garlic
- 0.25 cup parsley
- 1 cup mozzarella cheese
- Salt and pepper
- 1 cup breadcrumbs
- 4 medium zucchinis
Instructions
- Step 1: Preheat oven to 375°F (190°C).
- Step 2: Cut the zucchinis in half lengthwise and scoop out the insides, leaving a 1/2-inch thick shell.
- Step 3: In a large skillet, cook the sausage over medium-high heat, breaking it up with a spoon, until browned, about 5 minutes.
- Step 4: Add the chopped onion and cook until softened, about 3 minutes.
- Step 5: Add the garlic and cook for 1 minute.
- Step 6: In a large bowl, combine the cooked sausage mixture, breadcrumbs, Parmesan cheese, egg, parsley, salt, and pepper. Mix well.
- Step 7: Stuff each zucchini boat with the sausage mixture, dividing it evenly among the four zucchinis.
- Step 8: Place the stuffed zucchinis in a baking dish and cover with the shredded mozzarella cheese.
- Step 9: Bake for 30-35 minutes, or until the cheese is melted and bubbly.
