Ingredients

  • 1 pound Italian sausage
  • 1 cup Parmesan cheese
  • 1 egg
  • 1 medium onion
  • 2 cloves garlic
  • 0.25 cup parsley
  • 1 cup mozzarella cheese
  • Salt and pepper
  • 1 cup breadcrumbs
  • 4 medium zucchinis

Instructions

  1. Step 1: Preheat oven to 375°F (190°C).
  2. Step 2: Cut the zucchinis in half lengthwise and scoop out the insides, leaving a 1/2-inch thick shell.
  3. Step 3: In a large skillet, cook the sausage over medium-high heat, breaking it up with a spoon, until browned, about 5 minutes.
  4. Step 4: Add the chopped onion and cook until softened, about 3 minutes.
