Description
Soft and fluffy doughnuts infused with sweet potato puree and topped with a crunchy cinnamon sugar coating
Ingredients
- 4 tablespoons butter
- 0.5 cup sugar
- 0.25 teaspoon salt
- 2 large eggs
- 0.5 cup milk
- 0.5 cup cinnamon sugar
- 1 teaspoon cinnamon
- 2 cups flour
- 2 teaspoons active dry yeast
- 2 large sweet potatoes
Instructions
- Step 1: In a large mixing bowl, whisk together flour, sugar, and yeast
- Step 2: In a separate bowl, whisk together milk, egg, and melted butter
- Step 3: Add the wet ingredients to the dry ingredients and mix until a smooth batter forms
- Step 4: Add the mashed sweet potatoes and mix until well combined
- Step 5: Knead the dough for 10 minutes until smooth and elastic
- Step 6: Place the dough in a greased bowl, cover, and let rise in a warm place for 1 hour
- Step 7: Preheat the oil in a deep frying pan to 350°F
- Step 8: Punch down the dough and roll out to 1/2 inch thickness
- Step 9: Cut out doughnuts using a doughnut cutter
- Step 10: Fry the doughnuts for 2-3 minutes on each side, or until golden brown
