Description

A crispy and flavorful side dish made with roasted sweet potatoes, onions, and bell peppers

Ingredients

  • 1 large onion
  • 2 cloves garlic
  • 2 bell peppers
  • Salt and pepper
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 2 large sweet potatoes

Instructions

  1. Step 1: Preheat oven to 400°F (200°C)
  2. Step 2: Toss sweet potatoes, onion, and bell peppers with olive oil, smoked paprika, salt, and pepper on a baking sheet
  3. Step 3: Roast in the oven for 25-30 minutes or until tender and lightly browned
  4. Step 4: In a large skillet, heat 1 tbsp of olive oil over medium heat
  5. Step 5: Add garlic and cook for 1 minute until fragrant
  6. Step 6: Add roasted sweet potato mixture to the skillet and stir to combine
  7. Step 7: Use a spatula to press down on the mixture and shape into a flat layer
  8. Step 8: Cook for 5-7 minutes or until the bottom is crispy and golden brown
  9. Step 9: Flip the hash and cook for an additional 5 minutes or until crispy
