Description
A crispy and flavorful side dish made with roasted sweet potatoes, onions, and bell peppers
Ingredients
- 1 large onion
- 2 cloves garlic
- 2 bell peppers
- Salt and pepper
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 2 large sweet potatoes
Instructions
- Step 1: Preheat oven to 400°F (200°C)
- Step 2: Toss sweet potatoes, onion, and bell peppers with olive oil, smoked paprika, salt, and pepper on a baking sheet
- Step 3: Roast in the oven for 25-30 minutes or until tender and lightly browned
- Step 4: In a large skillet, heat 1 tbsp of olive oil over medium heat
- Step 5: Add garlic and cook for 1 minute until fragrant
- Step 6: Add roasted sweet potato mixture to the skillet and stir to combine
- Step 7: Use a spatula to press down on the mixture and shape into a flat layer
- Step 8: Cook for 5-7 minutes or until the bottom is crispy and golden brown
- Step 9: Flip the hash and cook for an additional 5 minutes or until crispy
