Description
A crispy falafel wrapped in a warm pita with creamy tahini sauce and fresh vegetables
Ingredients
- 0.25 cup cilantro
- 0.5 teaspoon cayenne pepper
- 0.5 teaspoon salt
- 4 breads pita
- 0.25 cup parsley
- 0.25 teaspoon black pepper
- 1 teaspoon paprika
- 2 tablespoons olive oil
- 2 tablespoons tahini
- 2 cloves garlic
- 1 cup cherry tomatoes
- 1 teaspoon cumin
- 1 tablespoon lemon juice
- 1 cup chickpeas
- 1 cup cucumber
- 2 tablespoons flour
- 2 leaves lettuce
Instructions
- Step 1: Preheat oven to 375°F (190°C).
- Step 2: In a food processor, combine chickpeas, garlic, parsley, cilantro, lemon juice, cumin, paprika, cayenne pepper, salt, and black pepper. Process until coarsely chopped.
- Step 3: Add flour and process until the mixture forms a thick paste.
- Step 4: Using your hands, shape the mixture into 8-10 patties.
- Step 5: Place the patties on a baking sheet lined with parchment paper and drizzle with 1 tablespoon of olive oil.
- Step 6: Bake for 20-25 minutes, flipping halfway through, until crispy and golden brown.
- Step 7: In a small bowl, whisk together tahini and 1 tablespoon of olive oil.
- Step 8: Warm pita breads by wrapping them in foil and heating in the oven for 5 minutes.
- Step 9: Assemble the wraps by spreading a tablespoon of tahini sauce on each pita, followed by 2-3 falafel patties, lettuce, cucumber, and cherry tomatoes.
