Description

A crispy falafel wrapped in a warm pita with creamy tahini sauce and fresh vegetables

Ingredients

  • 0.25 cup cilantro
  • 0.5 teaspoon cayenne pepper
  • 0.5 teaspoon salt
  • 4 breads pita
  • 0.25 cup parsley
  • 0.25 teaspoon black pepper
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • 2 tablespoons tahini
  • 2 cloves garlic
  • 1 cup cherry tomatoes
  • 1 teaspoon cumin
  • 1 tablespoon lemon juice
  • 1 cup chickpeas
  • 1 cup cucumber
  • 2 tablespoons flour
  • 2 leaves lettuce

Instructions

  1. Step 1: Preheat oven to 375°F (190°C).
  2. Step 2: In a food processor, combine chickpeas, garlic, parsley, cilantro, lemon juice, cumin, paprika, cayenne pepper, salt, and black pepper. Process until coarsely chopped.
  3. Step 3: Add flour and process until the mixture forms a thick paste.
  4. Step 4: Using your hands, shape the mixture into 8-10 patties.
  5. Step 5: Place the patties on a baking sheet lined with parchment paper and drizzle with 1 tablespoon of olive oil.
  6. Step 6: Bake for 20-25 minutes, flipping halfway through, until crispy and golden brown.
  7. Step 7: In a small bowl, whisk together tahini and 1 tablespoon of olive oil.
  8. Step 8: Warm pita breads by wrapping them in foil and heating in the oven for 5 minutes.
  9. Step 9: Assemble the wraps by spreading a tablespoon of tahini sauce on each pita, followed by 2-3 falafel patties, lettuce, cucumber, and cherry tomatoes.
