Ingredients

  • 0.5 teaspoon salt
  • 0.25 teaspoon cumin
  • 0.5 cup lard
  • 2 cloves garlic
  • 2 cups masa harina
  • 0.25 teaspoon black pepper
  • 1 cup green chile
  • 2 tablespoons cilantro
  • 1 cup chicken broth
  • 2 pounds pork shoulder

Instructions

  1. Step 1: In a large mixing bowl, combine the masa harina and salt
  2. Step 2: Gradually add the lard or shortening, mixing until the dough is well combined
  3. Step 3: Add the chicken broth, cumin, and black pepper, and mix until the dough is smooth and pliable
  4. Step 4: Cover the dough with plastic wrap or a damp cloth and let it rest for 30 minutes
  5. Step 5: To assemble the tamales, spread a thin layer of the dough onto a corn husk, leaving a 1-inch border around the edges
  6. Step 6: Place a tablespoon of the pork and green chile mixture in the center of the dough
  7. Step 7: Fold the sides of the corn husk over the filling and then roll the tamale up, starting from the wide end
  8. Step 8: Repeat with the remaining dough and filling
  9. Step 9: Place the tamales in a large steamer basket, with the open end facing up
  10. Step 10: Cover the tamales with a clean towel and then cover with a lid
  11. Step 11: Steam the tamales over boiling water for 45-60 minutes, or until the dough is firm and the filling is hot
