Description

A comforting casserole made with crispy tater tots, ground beef, and a rich cheese sauce

Ingredients

  • 1 medium onion
  • 2 cloves garlic
  • 1 lb ground beef
  • 1 cup milk
  • 0.5 cup all-purpose flour
  • 1 cup frozen peas and carrots
  • 0.25 tsp paprika
  • 0.5 cup Monterey Jack cheese
  • 1 32 oz tater tots
  • 2 cups cheddar cheese
  • 0.5 tsp black pepper
  • 1 tsp salt

Instructions

  1. Step 1: Preheat oven to 400°F (200°C)
  2. Step 2: Brown the ground beef in a large skillet over medium-high heat until fully cooked, breaking it up into small pieces as it cooks
  3. Step 3: Add the diced onion and minced garlic to the skillet and cook until the onion is translucent
  4. Step 4: Stir in the frozen peas and carrots and cook until thawed
  5. Step 5: In a separate saucepan, whisk together the milk, flour, salt, black pepper, and paprika
  6. Step 6: Bring the mixture to a simmer over medium heat and cook until thickened, stirring constantly
  7. Step 7: Remove the sauce from the heat and stir in the shredded cheddar and Monterey Jack cheese until melted and smooth
  8. Step 8: Spread half of the tater tots in the bottom of a 9x13 inch baking dish
  9. Step 9: Pour the cheese sauce over the tater tots, followed by the ground beef mixture
  10. Step 10: Top with the remaining tater tots
  11. Step 11: Bake for 45-50 minutes, or until the tater tots are golden brown and the casserole is hot and bubbly
