Description
A flavorful breakfast skillet filled with scrambled eggs, chorizo, and peppers, served with crispy tortillas.
Ingredients
- 2 large tomatoes
- 1 pound Mexican chorizo
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 2 cloves garlic
- 2 large bell peppers
- 1 large onion
- 6 large eggs
- 0.5 teaspoon cayenne pepper
- Salt and pepper

- 8 corn tortillas
Instructions
- Step 1: Cook the chorizo in a large cast-iron skillet over medium-high heat, breaking it up with a spoon, until browned, about 5 minutes.
- Step 2: Remove the chorizo from the skillet with a slotted spoon and set aside.
- Step 3: Add the diced onion to the skillet and cook until translucent, about 3-4 minutes.
- Step 4: Add the diced bell peppers and cook until tender, about 4-5 minutes.
- Step 5: Add the diced tomatoes, garlic, cumin, smoked paprika, and cayenne pepper to the skillet. Cook for 2-3 minutes.
- Step 6: Push the vegetable mixture to one side of the skillet. Crack in the eggs and scramble them until cooked through.
- Step 7: Mix the eggs with the vegetable mixture and add the cooked chorizo back into the skillet. Season with salt and pepper to taste.
- Step 8: Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
- Step 9: To assemble the skillet, place a portion of the egg and chorizo mixture onto a warmed tortilla and top with shredded cheese and chopped cilantro.
