Description

Ingredients

  • 2 large tomatoes
  • 1 pound Mexican chorizo
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 2 cloves garlic
  • 2 large bell peppers
  • 1 large onion
  • 6 large eggs
  • 0.5 teaspoon cayenne pepper
  • Salt and pepper
  • cilantro
  • Shredded cheese
  • 8 corn tortillas

Instructions

  1. Step 1: Cook the chorizo in a large cast-iron skillet over medium-high heat, breaking it up with a spoon, until browned, about 5 minutes.
  2. Step 2: Remove the chorizo from the skillet with a slotted spoon and set aside.
  3. Step 3: Add the diced onion to the skillet and cook until translucent, about 3-4 minutes.
  4. Step 4: Add the diced bell peppers and cook until tender, about 4-5 minutes.
  5. Step 5: Add the diced tomatoes, garlic, cumin, smoked paprika, and cayenne pepper to the skillet. Cook for 2-3 minutes.
  6. Step 6: Push the vegetable mixture to one side of the skillet. Crack in the eggs and scramble them until cooked through.
  7. Step 7: Mix the eggs with the vegetable mixture and add the cooked chorizo back into the skillet. Season with salt and pepper to taste.
  8. Step 8: Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
  9. Step 9: To assemble the skillet, place a portion of the egg and chorizo mixture onto a warmed tortilla and top with shredded cheese and chopped cilantro.
