Description
A flavorful and refreshing wrap filled with crispy tofu, crunchy vegetables, and creamy Thai peanut sauce.
Ingredients
- 0.5 cup peanut butter
- 2 cloves garlic
- 2 tablespoons ginger
- 1 small red bell pepper
- 2 tablespoons honey
- 0.25 cup water
- Salt and pepper
- 0.25 cup cilantro
- 1 small cucumber
- 1 tablespoon vegetable oil
- 2 large flour tortillas
- 0.25 cup soy sauce
- 1 block tofu
Instructions
- Step 1: In a blender or food processor, combine peanut butter, soy sauce, water, honey, ginger, and garlic. Blend until smooth.
- Step 2: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the tofu and cook until golden brown on all sides, about 5-7 minutes.
- Step 3: Add the sliced red bell pepper to the skillet and cook for an additional 2-3 minutes, until tender.
- Step 4: In a large bowl, combine the cooked tofu and bell pepper, peanut sauce, and chopped cilantro. Season with salt and pepper to taste.
- Step 5: Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
- Step 6: Assemble the wraps by spooning the tofu and peanut sauce mixture onto the center of each tortilla, topping with sliced cucumber, and folding the bottom half of the tortilla up over the filling, then folding in the sides and rolling the wrap up tightly.
