Description
A hearty and flavorful vegetarian chili made with three types of beans, onions, garlic, and bell peppers.
Ingredients
- 0.5 teaspoon salt
- 2 tablespoons olive oil
- 0.5 teaspoon cayenne pepper
- 2 cups bell peppers
- 1 teaspoon ground cumin
- 1 can diced tomatoes
- 0.25 teaspoon black pepper
- 1 large onion
- 1 teaspoon oregano
- 1 can red kidney beans
- 2 tablespoons chili powder
- 1 can black beans
- 1 can pinto beans
- 3 cloves garlic
Instructions
- Step 1: Heat the olive oil in a large pot over medium heat.
- Step 2: Add the chopped onion and cook until softened, about 5 minutes.
- Step 3: Add the minced garlic and cook for 1 minute.
- Step 4: Add the chopped bell peppers and cook until tender, about 5 minutes.
- Step 5: Stir in the chili powder, cumin, oregano, cayenne pepper, salt, and black pepper. Cook for 1 minute.
- Step 6: Add the diced tomatoes, red kidney beans, black beans, and pinto beans. Stir to combine.
- Step 7: Bring the chili to a simmer and cook for 20-25 minutes or until the flavors have melded together and the chili has thickened slightly.
