Description

Ingredients
- 1 teaspoon salt
- 1 large onion
- 1 cup feta cheese
- 1 cup dill
- 1 teaspoon black pepper
- 1 4-6 pound boneless prime rib roast
- 1 cup hummus
- 3 cloves garlic
- 12 cherry tomatoes
- 1 teaspoon garlic powder
- 1 teaspoon thyme
- 2 large red bell peppers
- 12 pita chips
- 1 cup parsley
- 2 tablespoons olive oil
- 1 cup tzatziki sauce
- 2 large zucchinis
Instructions
- Step 1: Preheat oven to 325°F (165°C).
- Step 2: Season the prime rib roast with salt, black pepper, garlic powder, and thyme.
- Step 3: Heat the olive oil in a large skillet over medium-high heat. Sear the prime rib roast until browned on all sides, about 2-3 minutes per side.
- Step 4: Transfer the prime rib roast to a large baking sheet and roast in the preheated oven for 15 minutes per pound, or until the internal temperature reaches 135°F (57°C) for medium-rare.
- Step 5: While the prime rib is roasting, toss the sliced onion and minced garlic with a little bit of olive oil, salt, and pepper on a separate baking sheet. Roast in the oven for 20-25 minutes, or until the onions are caramelized and golden brown.
- Step 6: Toss the sliced red bell peppers and zucchinis with a little bit of olive oil, salt, and pepper on a separate baking sheet. Roast in the oven for 15-20 minutes, or until the vegetables are tender and lightly browned.
- Step 7: Spread the hummus and tzatziki sauce on a large platter or individual plates.
- Step 8: Slice the roasted prime rib into thin strips and arrange on top of the dips.
- Step 9: Top the prime rib with roasted onions, bell peppers, zucchinis, crumbled feta cheese, chopped parsley, and chopped dill.
- Step 10: Serve with pita chips and cherry tomatoes on the side.
