Ingredients

  • 2 tablespoons butter
  • 0.5 teaspoon black pepper
  • 0.5 cup cheddar cheese
  • 2 cloves garlic
  • 1 teaspoon salt
  • 0.25 cup chives
  • 0.5 cup sour cream
  • 4 large baking potatoes

Instructions

  1. Step 1: Preheat oven to 400°F (200°C).
  2. Step 2: Scrub the potatoes clean and poke some holes in them with a fork. Rub with butter and season with salt and pepper.
  3. Step 3: Bake the potatoes for 45-60 minutes, or until tender when pierced with a fork.
  4. Step 4: Remove the potatoes from the oven and let cool for 10 minutes.
  5. Step 5: Slice the potatoes in half lengthwise and scoop out most of the flesh, leaving a thin layer to hold the skin together.
  6. Step 6: In a bowl, mash the potato flesh with the sour cream, cheddar cheese, garlic, and chives.
  7. Step 7: Stuff each potato skin with the mashed potato mixture and place on a baking sheet.
  8. Step 8: Bake for an additional 15-20 minutes, or until the filling is heated through and the top is golden brown.
