Description

A tender and flavorful dish featuring pork belly cooked twice for maximum richness

Ingredients

  • 1 tsp black pepper
  • 2 tbsp soy sauce
  • 1 kg pork belly
  • 2 tbsp vegetable oil
  • 1 tsp salt
  • 2 tbsp Shaoxing wine
  • 2 tbsp brown sugar
  • 1 tsp smoked paprika
  • 2 inches ginger
  • 2 cloves garlic

Instructions

  1. Step 1: Preheat oven to 300°F (150°C)
  2. Step 2: In a small bowl, mix together brown sugar, smoked paprika, salt, and black pepper
  3. Step 3: Rub the spice mixture all over the pork belly, making sure to coat evenly
  4. Step 4: Place the pork belly on a wire rack set over a rimmed baking sheet and roast for 2 hours
  5. Step 5: While the pork is roasting, heat 1 tablespoon of vegetable oil in a small saucepan over medium heat
  6. Step 6: Add the minced garlic and sliced ginger to the saucepan and cook, stirring constantly, for 1 minute
  7. Step 7: Add the soy sauce and Shaoxing wine to the saucepan and bring to a boil
  8. Step 8: Reduce the heat to low and simmer the sauce for 5 minutes
  9. Step 9: After the pork has roasted for 2 hours, remove it from the oven and brush the sauce all over the top
  10. Step 10: Increase the oven temperature to 400°F (200°C) and return the pork to the oven for an additional 20-25 minutes, or until caramelized and crispy
