Description
A refreshing twist on traditional falafel, served in a warm pita with a cool tzatziki sauce
Ingredients
- 1 cup Greek yogurt
- 1 teaspoon paprika
- 0.5 cups chickpeas
- 0.25 cup parsley
- 0.25 teaspoon black pepper
- 2 cloves garlic
- 0.25 cup cilantro
- 1 teaspoon ground cumin
- 0.5 cup cucumber
- 2 tablespoons olive oil
- 0.5 teaspoon salt
- 2 tablespoons all-purpose flour
- 2 tablespoons dill
- 4 breads pita
- 1 tablespoon lemon juice
- 0.5 teaspoon cayenne pepper
Instructions
- Step 1: Preheat the oven to 375°F (190°C)
- Step 2: In a food processor, combine chickpeas, garlic, parsley, cilantro, lemon juice, cumin, paprika, cayenne pepper, salt, and black pepper. Process until coarsely chopped
- Step 3: Transfer the mixture to a bowl and stir in flour
- Step 4: Using your hands, shape the mixture into 8-10 patties
- Step 5: Place the patties on a baking sheet lined with parchment paper, drizzle with olive oil, and bake for 20-25 minutes, flipping halfway through
- Step 6: While the falafel is baking, prepare the tzatziki sauce by combining yogurt, cucumber, lemon juice, salt, and black pepper in a bowl. Stir in chopped fresh dill
- Step 7: Warm the pita breads by wrapping them in foil and heating them in the oven for 5 minutes
- Step 8: Assemble the sandwiches by spreading tzatziki sauce on each pita, followed by a few falafel patties, and any desired toppings
