Description

A classic Greek street food featuring tender lamb, refreshing tzatziki sauce, and crispy pita bread

Ingredients

  • 0.5 cup (120ml) extra-virgin olive oil
  • 4 pita bread
  • 1 cup Greek yogurt
  • 1 teaspoon paprika
  • 2 tablespoons lemon juice
  • 2 cloves garlic
  • 1 large cucumber
  • dill
  • Salt and pepper
  • 500 g lamb shoulder
  • 1 tablespoon oregano

Instructions

  1. Step 1: Preheat a grill or grill pan to medium-high heat.
  2. Step 2: In a large bowl, whisk together olive oil, garlic, oregano, paprika, salt, and pepper. Add the lamb slices and marinate for at least 30 minutes.
  3. Step 3: Grill the lamb for 4-5 minutes per side, or until cooked through. Transfer to a cutting board and let rest for 5 minutes.
  4. Step 4: Meanwhile, prepare the tzatziki sauce. In a bowl, combine cucumber, yogurt, garlic, lemon juice, salt, and pepper. Refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Step 5: Warm the pita bread by wrapping it in foil and heating it in the oven for 5 minutes.
  6. Step 6: Assemble the gyro by slicing the lamb into thin strips and placing it onto the pita bread. Top with tzatziki sauce, and garnish with chopped fresh dill.
