Description
Rich vanilla custard base topped with a caramelized sugar crust
Ingredients
- 1 cup sugar
- 3 large egg yolks
- 0.5 vanilla bean vanilla
- 0.5 teaspoon kosher salt
- 0.5 cup whole milk
- 1 cups heavy cream
- 0.5 teaspoon vanilla extract
- 0.25 cup granulated sugar
Instructions
- Step 1: Preheat oven to 300°F (150°C).
- Step 2: In a medium saucepan, whisk together cream, 1 cup sugar, milk, and salt.
- Step 3: Add vanilla extract and vanilla bean to the saucepan.
- Step 4: Heat over medium heat, stirring occasionally, until sugar dissolves and mixture simmers.
- Step 5: In a small bowl, whisk together egg yolks.
- Step 6: Gradually add warm cream mixture to egg yolks, whisking constantly.
- Step 7: Strain mixture into 4-6 ramekins or small baking dishes.
- Step 8: Place ramekins in a large baking dish and add hot water to come halfway up the sides.
- Step 9: Bake for 25-30 minutes or until edges are set and centers are still slightly jiggly.
- Step 10: Remove from oven and let cool to room temperature.
- Step 11: Cover with plastic wrap and refrigerate for at least 2 hours or overnight.
- Step 12: Just before serving, sprinkle a thin layer of granulated sugar over the top of each ramekin.
- Step 13: Caramelize sugar with a kitchen torch or under the broiler.
