Vanilla Bean Crème Brûlée

Description

Rich vanilla custard base topped with a caramelized sugar crust

Ingredients

  • 1 cup sugar
  • 3 large egg yolks
  • 0.5 vanilla bean vanilla
  • 0.5 teaspoon kosher salt
  • 0.5 cup whole milk
  • 1 cups heavy cream
  • 0.5 teaspoon vanilla extract
  • 0.25 cup granulated sugar

Instructions

  1. Step 1: Preheat oven to 300°F (150°C).
  2. Step 2: In a medium saucepan, whisk together cream, 1 cup sugar, milk, and salt.
  3. Step 3: Add vanilla extract and vanilla bean to the saucepan.
  4. Step 4: Heat over medium heat, stirring occasionally, until sugar dissolves and mixture simmers.
  5. Step 5: In a small bowl, whisk together egg yolks.
  6. Step 6: Gradually add warm cream mixture to egg yolks, whisking constantly.
  7. Step 7: Strain mixture into 4-6 ramekins or small baking dishes.
  8. Step 8: Place ramekins in a large baking dish and add hot water to come halfway up the sides.
  9. Step 9: Bake for 25-30 minutes or until edges are set and centers are still slightly jiggly.
  10. Step 10: Remove from oven and let cool to room temperature.
  11. Step 11: Cover with plastic wrap and refrigerate for at least 2 hours or overnight.
  12. Step 12: Just before serving, sprinkle a thin layer of granulated sugar over the top of each ramekin.
  13. Step 13: Caramelize sugar with a kitchen torch or under the broiler.
