Description
A flavorful and aromatic Indian-inspired rice dish loaded with sautéed vegetables and a blend of warming spices.
Ingredients
- 0.5 teaspoon cayenne pepper
- 2 cups water
- 1 small red bell pepper
- 0.5 teaspoon turmeric
- 2 cloves garlic
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 1 small zucchini
- 1 small carrot
- 1 small onion
- 1 cup basmati rice
- 2 tablespoons ghee
- 1 teaspoon cumin
- 2 tablespoons cilantro
- 1 teaspoon coriander
Instructions
- Step 1: Rinse the rice in a fine mesh sieve and soak it in water for 30 minutes. Drain and set aside.
- Step 2: Heat 1 tablespoon of ghee or oil in a large saucepan over medium heat. Add the onion and cook until softened, about 5 minutes.
- Step 3: Add the garlic, carrot, zucchini, and bell pepper. Cook, stirring occasionally, until the vegetables are tender, about 5-7 minutes.
- Step 4: Stir in the cumin, coriander, turmeric, cayenne pepper (if using), salt, and black pepper. Cook for 1 minute.
- Step 5: Add the soaked rice to the saucepan and stir to coat the rice with the spice mixture. Cook for 2-3 minutes.
- Step 6: Add the water to the saucepan and bring to a boil. Reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is cooked and fluffy.
- Step 7: Turn off the heat and let the biryani rest, covered, for 5 minutes.
- Step 8: Fluff the biryani with a fork and garnish with chopped cilantro. Serve hot.
