Description

A rich and creamy Indian-inspired vegetable curry made with a blend of spices and yogurt

Ingredients

  • 0.25 tsp black pepper
  • 1 cup vegetable broth
  • 2 tbsp cilantro
  • 2 medium potatoes
  • 2 medium carrots
  • 1 tsp cinnamon
  • 1 can diced tomatoes
  • 0.5 tsp salt
  • 0.5 tsp cayenne pepper
  • 1 large red bell pepper
  • 2 tbsp vegetable oil
  • 1 cup plain yogurt
  • 3 cloves garlic
  • 2 medium onions
  • 1 tsp ground coriander
  • 2 tsp cumin

Instructions

  1. Step 1: Heat oil in a large saucepan over medium heat
  2. Step 2: Add onions and cook until softened, about 5 minutes
  3. Step 3: Add garlic, cumin, coriander, cinnamon, cayenne pepper, salt, and black pepper. Cook for 1 minute
  4. Step 4: Add carrots, potatoes, and bell pepper. Cook for 5 minutes
  5. Step 5: Stir in diced tomatoes, yogurt, and vegetable broth. Bring to a simmer
  6. Step 6: Reduce heat to low and cook, covered, for 20 minutes or until vegetables are tender
  7. Step 7: Stir in chopped cilantro and serve over rice or with naan bread
