Description
A rich and creamy Indian-inspired vegetable curry made with a blend of spices and yogurt
Ingredients
- 0.25 tsp black pepper
- 1 cup vegetable broth
- 2 tbsp cilantro
- 2 medium potatoes
- 2 medium carrots
- 1 tsp cinnamon
- 1 can diced tomatoes
- 0.5 tsp salt
- 0.5 tsp cayenne pepper
- 1 large red bell pepper
- 2 tbsp vegetable oil
- 1 cup plain yogurt
- 3 cloves garlic
- 2 medium onions
- 1 tsp ground coriander
- 2 tsp cumin
Instructions
- Step 1: Heat oil in a large saucepan over medium heat
- Step 2: Add onions and cook until softened, about 5 minutes
- Step 3: Add garlic, cumin, coriander, cinnamon, cayenne pepper, salt, and black pepper. Cook for 1 minute
- Step 4: Add carrots, potatoes, and bell pepper. Cook for 5 minutes
- Step 5: Stir in diced tomatoes, yogurt, and vegetable broth. Bring to a simmer
- Step 6: Reduce heat to low and cook, covered, for 20 minutes or until vegetables are tender
- Step 7: Stir in chopped cilantro and serve over rice or with naan bread
