Ingredients
- 2 cloves garlic
- 2 teaspoons yeast
- 1 large red bell pepper
- 2 tablespoons olive oil
- 1 small red onion
- 1 teaspoon salt
- 0.5 cups water
- 1.5 cups all-purpose flour
- 1 eggplant
- 1 large zucchini
- 0.5 cup pizza sauce
- 1 cup shredded mozzarella cheese

Instructions
- Step 1: Preheat the oven to 425°F (220°C).
- Step 2: In a large bowl, combine the warm water and yeast. Let it sit for 5-7 minutes until the yeast is activated.
- Step 3: Add the flour, salt, and olive oil to the bowl. Mix until a dough forms.
- Step 4: Knead the dough for 5-7 minutes until it becomes smooth and elastic.
- Step 5: Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for 1 hour.
- Step 6: Punch down the dough and roll it out into a 12-inch circle.
- Step 7: Transfer the dough to a greased pizza pan or baking sheet.
- Step 8: Spread the pizza sauce over the dough, leaving a 1/2-inch border around the edges.
- Step 9: Top the sauce with the mozzarella and parmesan cheese.
- Step 10: Arrange the eggplant, zucchini, bell pepper, and onion slices on top of the cheese.
- Step 11: Sprinkle the garlic and chopped basil leaves over the vegetables.
- Step 12: Bake the pizza in the preheated oven for 20-25 minutes until the crust is golden brown and the cheese is melted and bubbly.
