A flavorful and healthy wrap filled with roasted vegetables and creamy hummus
Ingredients
- 2 cloves garlic
- 0.25 cup parsley
- 1 large zucchini
- 3 tablespoons olive oil
- 0.5 teaspoon salt
- 0.25 cup tahini
- 1 eggplant
- 0.5 cup chickpeas
- 1 large flour tortilla
- 1 large red bell pepper
- 0.25 cup lemon juice
Instructions
- Step 1: Preheat oven to 425°F (220°C).
- Step 2: In a blender or food processor, combine chickpeas, lemon juice, tahini, garlic, and salt. Blend until smooth.
- Step 3: Brush both sides of eggplant, zucchini, and red bell pepper with olive oil. Season with salt.
- Step 4: Roast the vegetables in the oven for 20-25 minutes, or until tender and lightly browned.
- Step 5: Spread the hummus on the tortilla, leaving a 1-inch border around the edges.
- Step 6: Arrange the roasted vegetables on top of the hummus.
- Step 7: Sprinkle parsley on top and fold the bottom edge of the tortilla up over the filling, then fold in the sides and roll up the wrap tightly.
