Ingredients

  • 2 cloves garlic
  • 0.25 cup parsley
  • 1 large zucchini
  • 3 tablespoons olive oil
  • 0.5 teaspoon salt
  • 0.25 cup tahini
  • 1 eggplant
  • 0.5 cup chickpeas
  • 1 large flour tortilla
  • 1 large red bell pepper
  • 0.25 cup lemon juice

Instructions

  1. Step 1: Preheat oven to 425°F (220°C).
  2. Step 2: In a blender or food processor, combine chickpeas, lemon juice, tahini, garlic, and salt. Blend until smooth.
  3. Step 3: Brush both sides of eggplant, zucchini, and red bell pepper with olive oil. Season with salt.
  4. Step 4: Roast the vegetables in the oven for 20-25 minutes, or until tender and lightly browned.
  5. Step 5: Spread the hummus on the tortilla, leaving a 1-inch border around the edges.
  6. Step 6: Arrange the roasted vegetables on top of the hummus.
  7. Step 7: Sprinkle parsley on top and fold the bottom edge of the tortilla up over the filling, then fold in the sides and roll up the wrap tightly.
