Description

A delicious and healthy sandwich filled with roasted vegetables and creamy hummus

Ingredients

  • 1 eggplant
  • 1 cup cherry tomatoes
  • 1 cup mixed greens
  • 2 cloves garlic
  • 2 tablespoons olive oil
  • 4 slices whole grain bread
  • 1 large red bell pepper
  • 2 tablespoons hummus
  • 1 large zucchini

Instructions

  1. Step 1: Preheat oven to 400°F (200°C).
  2. Step 2: In a large bowl, toss eggplant, zucchini, and red bell pepper with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes, or until tender.
  3. Step 3: In a small bowl, mix together hummus and garlic.
  4. Step 4: Spread 1 tablespoon of hummus mixture on each bread slice.
  5. Step 5: Layer roasted vegetables, mixed greens, and cherry tomatoes on two bread slices.
  6. Step 6: Top with remaining bread slices.
  7. Step 7: Cut in half and serve.
