Vietnamese Bánh Mì with Grilled Pork

Description
A classic Vietnamese sandwich filled with grilled pork, pickled vegetables, and herbs, served on a crispy baguette.
Ingredients
- 2 cloves garlic
- 1 large carrot
- 1 tablespoon brown sugar
- 4 Banh Mi baguettes
- 0.25 cup cilantro
- 1 large cucumber
- 0.25 cup fish sauce
- 1 pound pork shoulder
- 2 tablespoons lime juice
- 2 tablespoons pickled daikon radish
- Salt
- 1 teaspoon ground black pepper
- 2 tablespoons mayonnaise
- 2 tablespoons sriracha sauce
Instructions
- Step 1: In a large bowl, whisk together fish sauce, lime juice, garlic, brown sugar, and black pepper.
- Step 2: Add the sliced pork to the marinade and mix well. Cover and refrigerate for at least 2 hours or overnight.
- Step 3: Preheat a grill or grill pan to medium-high heat. Remove the pork from the marinade and cook for 5-7 minutes per side, or until cooked through.
- Step 4: Meanwhile, toast the baguettes by grilling or baking at 375°F (190°C) for 5 minutes.
- Step 5: Assemble the sandwiches by spreading mayonnaise on the bottom half of the baguette, followed by a few slices of grilled pork, pickled daikon radish, carrot, cucumber, cilantro, and sriracha sauce.
- Step 6: Top with the top half of the baguette and serve immediately.
