Description

Spicy Indian curry dish made with marinated meat cooked in a flavorful tomato-based sauce

Ingredients

  • 2 teaspoons cumin
  • 2 cloves garlic
  • 2 tablespoons white vinegar
  • 1 medium tomato
  • 1 tablespoon tomato puree
  • 500 g pork
  • 0.5 teaspoon cayenne pepper
  • 1 teaspoon ground coriander
  • 2 medium onions
  • 2 dried red Kashmiri chilies
  • 0.5 teaspoon turmeric
  • 0.5 teaspoon salt
  • 1 tablespoon ghee or vegetable oil
  • 0.25 teaspoon black pepper

Instructions

  1. Step 1: Marinate the meat in a mixture of vinegar, cumin, coriander, turmeric, cayenne pepper, salt, and black pepper for at least 30 minutes
  2. Step 2: Heat oil in a large pan over medium heat and sauté the onions until they are lightly browned
  3. Step 3: Add the garlic and sauté for another minute
  4. Step 4: Add the marinated meat and cook until it is browned on all sides
  5. Step 5: Add the diced tomato, tomato puree, crushed red chilies or red pepper flakes, and 1/2 cup of water
  6. Step 6: Bring the mixture to a boil, then reduce the heat to low and simmer for 20-25 minutes or until the meat is cooked through
  7. Step 7: Serve hot garnished with fresh cilantro or scallions
