Description
A classic Italian dish featuring tender veal cutlets, served with a zesty white wine and caper sauce.
Ingredients
- 2 tbsp capers
- 1 cup all-purpose flour
- 1 tsp salt
- 2 cloves garlic
- 1 tsp black pepper
- 2 tbsp parsley
- 1 cup white wine
- 2 tbsp lemon juice
- 4 6 oz veal cutlets
- 2 tbsp butter
- 2 tbsp olive oil
- 1 cup chicken broth
Instructions
- Step 1: Season veal cutlets with salt and pepper.
- Step 2: Dredge veal cutlets in flour, shaking off excess.
- Step 3: Heat olive oil in a large skillet over medium-high heat.
- Step 4: Add veal cutlets and cook for 2-3 minutes per side, or until browned and cooked through.
- Step 5: Transfer veal cutlets to a plate and cover with foil to keep warm.
- Step 6: Reduce heat to medium and add garlic to the skillet. Cook for 1 minute, or until fragrant.
- Step 7: Add white wine, chicken broth, and butter to the skillet. Scrape up any browned bits from the bottom of the pan.
- Step 8: Bring sauce to a simmer and cook for 2-3 minutes, or until slightly reduced.
- Step 9: Stir in lemon juice, parsley, and capers.
- Step 10: Serve veal cutlets with the white wine sauce spooned over the top.
