Description
A rich and creamy soup made with a variety of wild mushrooms
Ingredients
- 0.5 cup heavy cream
- 1 medium onion
- 1 teaspoon thyme
- 0.5 teaspoon rosemary
- 3 cups mixed wild mushrooms
- 1 cup chicken broth
- 2 tablespoons butter
- 0.25 teaspoon black pepper
- 2 cloves garlic
- 0.5 cup all-purpose flour
- 0.5 teaspoon salt
Instructions
- Step 1: Melt butter in a large saucepan over medium heat. Add onion and cook until softened, about 5 minutes.
- Step 2: Add mushrooms, garlic, thyme, rosemary, salt, and pepper. Cook until mushrooms release their liquid and start to brown, about 5 minutes.
- Step 3: Sprinkle flour over mushroom mixture and cook for 1 minute.
- Step 4: Gradually stir in broth and bring to a boil. Reduce heat and simmer for 10 minutes.
- Step 5: Use an immersion blender to puree soup until smooth. Alternatively, transfer soup to a blender and blend until smooth, then return to saucepan.
- Step 6: Stir in heavy cream and cook over low heat until heated through. Serve hot.
