Ingredients

  • 0.5 cup heavy cream
  • 1 medium onion
  • 1 teaspoon thyme
  • 0.5 teaspoon rosemary
  • 3 cups mixed wild mushrooms
  • 1 cup chicken broth
  • 2 tablespoons butter
  • 0.25 teaspoon black pepper
  • 2 cloves garlic
  • 0.5 cup all-purpose flour
  • 0.5 teaspoon salt

Instructions

  1. Step 1: Melt butter in a large saucepan over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Step 2: Add mushrooms, garlic, thyme, rosemary, salt, and pepper. Cook until mushrooms release their liquid and start to brown, about 5 minutes.
  3. Step 3: Sprinkle flour over mushroom mixture and cook for 1 minute.
  4. Step 4: Gradually stir in broth and bring to a boil. Reduce heat and simmer for 10 minutes.
  5. Step 5: Use an immersion blender to puree soup until smooth. Alternatively, transfer soup to a blender and blend until smooth, then return to saucepan.
  6. Step 6: Stir in heavy cream and cook over low heat until heated through. Serve hot.
