Description
A classic Chinese dish from Yangzhou, made with cooked rice, vegetables, and meat.
Ingredients
- 1 teaspoon oyster sauce
- 1 small onion
- 1 cup mixed vegetables
- 2 cloves garlic
- Salt and pepper
- 2 eggs
- 1 cup chicken
- 1 tablespoon vegetable oil
- 2 cups rice
- 2 teaspoons soy sauce
- Scallions
Instructions
- Step 1: Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Step 2: Add the diced onion and minced garlic and stir-fry until they are translucent.
- Step 3: Add the mixed vegetables and cooked chicken, and stir-fry for 2-3 minutes.
- Step 4: Push the vegetables and chicken to one side of the pan.
- Step 5: Add a little more oil if necessary, then pour the beaten eggs into the other side of the pan.
- Step 6: Scramble the eggs until they are cooked through, then mix them with the vegetables and chicken.
- Step 7: Add the cooked rice to the pan, breaking up any clumps with a spatula.
- Step 8: Stir-fry the rice with the vegetables and eggs for about 5 minutes, until everything is well combined and heated through.
- Step 9: Add the soy sauce and oyster sauce (if using), and stir-fry for another minute.
- Step 10: Taste and adjust the seasoning as needed.
- Step 11: Transfer the fried rice to a serving platter, garnish with chopped scallions, and serve immediately.
